Chicken Flattie

How to cook: 

Grill:

Over a hot fire or coals, place the chicken ribs down on the fire and turn regularly. If you are using a sauce, baste the chicken each time you turn to avoid drying the meat out and crispen the skin.

Oven:

Crank the oven to 200(C) degrees; place the chicken in an oven suitable dish, and cover with foil, cook in the oven for 20 minutes, remove the foil for the last 5 minutes to get it crispy. 

If you are using a sauce, baste the chicken beforehand. After 10 minutes, remove and baste again, leave the foil off for the last 10 minutes.
